The Blueberry Coffee-Cake Muffins suggests using the Stud Muffin Pan to bake them in. The pan is a nonstick, pan fits 12 muffins, cupcakes, baby quiches, and more. Unlike other pans the Stud Muffin Pan distributes the heat evenly and provides a quick release, along with easy clean up. I highly recommend their pans if you like to bake. Unlike other pans that I’ve used in the past these really do make your bake goods get done without having uneven or unbaked areas. Plus they are sturdy and will last a lifetime!

Blueberry Coffee-Cake Recipe Information

The recipe is a no-mixer muffin batter studded with fresh blueberries gets topped with a crunchy cinnamon streusel topping similar to a crumb layer on bakery-style coffee cakes. By adding a simple glaze you can complete the muffins with the iconic coffee-cake look.


The ingredients are simple, basic items that a typical baker has in their kitchen. This includes flour, brown sugar, cinnamon, unsalted butter, eggs, sunflower oil, lemon zest, and vanilla extract for the crumb topping.

As far as the batter is concerned you will need blueberries of course, flour, brown sugar, baking powder, baking soda, cinnamon, salt, oil, and milk.

When making the glaze for the top of the muffins you will need confectioners’ sugar and milk.

Recipe is for 12 muffins but of course you can make as many as you want!
